History: Before the 15th century, sugar was seen as a fine spice, and was in high demand. But technological advances made it easier to produce, therefore cheaper and more widespread. Sugarcane used to be chewed on, but the Indians were the first to crystallize sugar in the 4th century.
Farming and harvesting: The sugarcane plant takes almost a year to reach maturity. At maturity, the stalks are cut as close to the bottom as possible. Those stalks are pressed from advanced “juicers”, and then mill-white sugar is extracted.
