The use of spinach in “florentine” dishes comes from Florence, the birth place of Catherine de’Medici, the queen of France in 1533 who demanded spinach be served at every meal.
Farming and harvesting: This flowering plant is native to southwestern Asia. It becomes bitter quickly after maturing, so harvesting promptly is key to a quality harvest. The entire plant is cut at the base, and leaves peeled off by layer.
