History: The nutmeg tree is native to Indonesia, and has been producing spices for centuries. Historians believe that the Dutch probably were the first to discover the use of this spice.
Farming and harvesting: Mace is the red waxy covering that covers a nutmeg seed. It tastes similar to nutmeg but with a bit of a kick. Mace, though bright red at first, turns orange, creamy or brown as it dries. It can be sold as blades (whole pieces that can be ground as needed) or as powder.
Culinary applications: This spice is mostly used in sweet dishes and desserts. These include sweet spiced pork, pies, fruitcakes, pumpkin pies and spice balls among hundreds of others.
