Flavor profile: Aromatic and mild, reminiscent of oregano
History: Native to Cyprus and southern Turkey. It was seen as a symbol of happiness to the Greeks and Romans.
Farming and harvesting: This is a perennial herb with pine and citrus flavors. It is a close relative to oregano and in the Middle East it is called sweet oregano. The tops are cut as the plant begins to flower and are laid to dry in the shade.
